Portabella Mushrooms are known to provide a bio-available vegan source of vitamin D. They are commonly used in Japan to fortify the diet especially in the winter months. The naturally occuring vitamin D in the form of ergocalciferol (vitamin D2), increases substantially after exposure to UV light, which may then be concentrated into a capsule form and taken as a supplement. This whole food also provides additional nutrients such as B vitamins and a wide range of minerals that help to increase the assimilation and efficacy of vitamin D.
